The Mix is returning this July, welcoming esteemed chef, Paul Wilson to the kitchen.
A two and three chefs hat winner in Sydney and Melbourne, Prince Dining Room is opening its doors once again to Paul Wilson, last gracing our second floor restaurant in the days of Circa.
Returning in celebration of truffle month, Wilson, alongside Prince Dining Room’s Executive Chef, Dan Cooper, has helped to craft a one-off truffle infused menu.
Bringing their own unique cooking styles and talent for refined flavour pairings, Cooper and Wilson will host guests for an immersive five course menu on Wednesday 26 July.

First course:
Warm organic farm egg w truffled Polenta, Aged Reggiano & Pangrattato
Second course:
Ora king salmon ravioli, lemon, crayfish sauce, black truffle
Third course:
Wagyu Croque Monsieur & wood grilled Wagyu Tartare w wild mushrooms & truffled mustard
Fourth course:
Tasmanian Lamb saddle, truffle crusted rib, nettle, broccoli leaf
Fifth course:
Banyuls, salted caramel & Chocolate & spiced quince trifle
